  1. Preheat oven to 180°C. Grease and flour a deep 20 cm round cake tin.
  2. Beat together olive-oil spread, sugar and vanilla extract in a medium bowl (by hand or with an electric mixer) until creamy.
  3. Add eggs one at a time; continue to beat for 2 minutes. Stir in yoghurt and add dry ingredients, sifted, and water. Beat until just combined. Stir in sultanas. (Sultanas improve the texture and flavour of cake, increasing its sweetness with their natural fruit sugars.)
  4. Pour mixture into prepared tin and bake for approximately 60 to 80 minutes; cooking time depends on oven—check regularly for browning. (If necessary, cover with foil halfway through cooking to prevent over-browning.) Cake is ready when it springs back upon touching and a wooden skewer inserted into the centre comes out clean.
