  1. Preheat oven to 200 degrees C. Line a large baking tray with baking paper. Sift flour into a large bowl. Using your fingertips, rub 70g butter into flour until mixture resembles fine breadcrumbs. Make a well in the centre of the flour and add the milk. Stir until mixture just comes together.
  2. Turn dough onto a lightly floured surface and quickly knead until smooth. Roll dough into a 1 cm thick rectangular shape.
  3. Combine sugar and cinnamon in a small bowl. Sprinkle sugar mixture over surface of dough. Dot dough surface with small pieces of remaining butter. Gently roll dough up from the longest side, enclosing cinnamon mixture.
  4. Cut dough into 2 cm thick rounds. Place the rounds 2 cm apart on the prepared baking tray. Mix egg with a little water and brush over scrolls. Bake for 15 - 20 minutes or until crisp and browned.
