- 3 cups Self Raising Flour
- 100 grams Butter diced
- 1 1/2 cups Milk
- 1/2 cup Brown Sugar
- 1 1/2 teaspoons Cinnamon Ground
- 1 Egg whisked

- Preheat oven to 200 degrees C. Line a large baking tray with baking paper. Sift flour into a large bowl. Using your fingertips, rub 70g butter into flour until mixture resembles fine breadcrumbs. Make a well in the centre of the flour and add the milk. Stir until mixture just comes together.
- Turn dough onto a lightly floured surface and quickly knead until smooth. Roll dough into a 1 cm thick rectangular shape.
- Combine sugar and cinnamon in a small bowl. Sprinkle sugar mixture over surface of dough. Dot dough surface with small pieces of remaining butter. Gently roll dough up from the longest side, enclosing cinnamon mixture.
- Cut dough into 2 cm thick rounds. Place the rounds 2 cm apart on the prepared baking tray. Mix egg with a little water and brush over scrolls. Bake for 15 - 20 minutes or until crisp and browned.
