- 50 grams Coconut Oil
- 50 grams Honey
- 50 grams Brown Sugar
- 1 teaspoon Vanilla
- pinch Salt
- 2 cups Rolled Oats
- 1 ½ cups Rice Bubbles
- 150 grams Chocolate Chips

Instructions
- Preheat oven to 170 degrees. Line slice tray with baking paper.
- Place brown sugar, honey, vanilla extract, salt and coconut oil into a microwave safe bowl or measuring cup.
- Microwave until melted together. Times may vary according to your microwave strength. Mine took 1 minute 30 seconds.
- In a large bowl mix together rolled oats and rice bubbles. Pour melted ingredients into bowl and mix well.
- Allow to cool a little then mix in half of the chocolate chips.
- Press mixture firmly into prepared slice tray.
- Sprinkle remaining chocolate chips over the top and press in firmly.
- Bake in the oven for approximately 30 minutes or until a lovely golden brown.
- Cool in tin for approximately 10-15 minutes before placing on to a wire rack to cool further. These will become super crunchy as they cool.
- When completely cooled cut into slices or rough chunks if you prefer a rustic look.
- Stir in an airtight container.
