Ingredients
- 90 grams Haloumi
- 1/2 Beetroot roasted and diced
- 1/4 Butternut Pumpkin sliced thinly
- 1/4 cup Chickpeas
- handful Baby Salad Leaves
- 1 tablespoon Pistachip Dukkah
Sweet Mustard Dressing:
- 1 teaspoon Wholegrain Mustard
- 1/2 teaspoon Granulated Sweetener
- 1/2 teaspoon White Balsamic Vinegar
- 1 teaspoon Avocado Oil
- 1/2 teaspoon Lemon Juice

Instructions
- Chargrill the Haloumi and pumpkin in a grill pan sprayed with coconut oil for a few minutes each side.
- Place all dressing ingredients in a container and shake well.
- Assemble all ingredients in a bowl and top with Dukkah and dressing.
