Ingredients
- 1 1/2 cups Plain Flour
- 1/2 teaspoon Cinnamon Powder ground
- 1/2 teaspoon Bi Carbonate of Soda
- 3/4 cup Brown Sugar
- 3/4 cup Vegetable Oil
- 3 Eggs lightly beaten
- 1/2 cup Pecans coarsely chopped
- 2 Bananas mashed
- 1/4 cup Pineapple chopped

Instructions
- Preheat oven to 180 c.
- Line 1 non-stick muffin holes with paper cases.
- Sift flour, cinnamon and bicarbonate of soda into a bowl. Stir in sugar.
- Add oil, eggs, pecans, banana and pineapple to flour mixture. Mix well.
- Divide mixture between paper cases.
- Bake for 20 to 25 minutes or until a skewer inserted into a cupcake comes out clean.
