Instructions
  1. Season the lamb with salt and pepper. Heat a pan and spray with olive oil, pan-fry the lamb for 6-8 minutes each side or until cooked to your preference. Set aside and cover with foil.
  2. Place noodles into a large bowl and pour over enough boiling water to cover. Stand for 3 minutes, then drain and place into another bowl. Add the snow peas, onion and carrot and baby corn. Add half the dressing and toss to combine.
  3. Divide salad between plates, slice the lamb and arrange over the top. Drizzle with remaining dressing and garnish with coriander leaves.
  4. For the dressing - Place ingredients in a small bowl and whisk until combined.
