Peanut Dressing
- 1/4 cup Peanut Oil
- 1/3 cup Lemon Juice
- 1/4 cup Peanut Butter
- 2 tablespoons Soy Sauce
- 2 tablespoons Brown Sugar

Instructions
- Season the lamb with salt and pepper. Heat a pan and spray with olive oil, pan-fry the lamb for 6-8 minutes each side or until cooked to your preference. Set aside and cover with foil.
- Place noodles into a large bowl and pour over enough boiling water to cover. Stand for 3 minutes, then drain and place into another bowl. Add the snow peas, onion and carrot and baby corn. Add half the dressing and toss to combine.
- Divide salad between plates, slice the lamb and arrange over the top. Drizzle with remaining dressing and garnish with coriander leaves.
- For the dressing - Place ingredients in a small bowl and whisk until combined.
