- 200 grams Parmesan Cheese grated
- 2 tablespoons Plain Flour
- 2 tablespoons Olive Oil
- pinch Salt and Pepper
- pinch Chilli Flakes optional
- pinch Fennel Seeds optional

Instructions
- Preheat oven to 190 degrees C. Place your baking sheet onto a tray into the oven to allow it to heat up.
- In a bowl add grated parmesan, flour, oil and salt and mix to combine.
- Using your finger tips gently crumble the cheese mix to ensure there are no lumps.
- Spoon mix onto your hot baking sheet and press down to flatten to make a thin circle.
- Place into the oven for 8-10 minutes then gently flip each wafer, bake for a further 2-3 minutes.
- Wafers should be lightly golden (careful not to overcook. The parmesan will go bitter if you do)
- Allow to cool slightly then move to a cooling rack to finish cooling.
- Repeat with remaining mixture.
