- 1/3 cup Extra Virgin Olive Oil
- 60 grams Parmesan Cheese
- 1/3 cup Pine Nuts
- 1 1/2 cups Basil Fresh, firmly packed
- 2 Garlic Cloves crushed
- 4 Chicken Thigh Fillets cut into small cubes

Instructions
- Toast pine nuts on a baking sheet in the microwave for 2 minutes checking regularly.
- Rise basil and place into a blender, then cover with remaining ingredients, excluding the chicken, and blend a little until chopped to desired pesto consistency.
- Line steaming section of your steamer with baking paper. Place chicken on baking paper and spread pesto over top, fold in edges and steam chicken for approx. 18 minutes.
- Serve with cooked pasta. Toss through chicken adding chopped sun-dried tomatoes, black olives, etc.
