  1. Preheat oven to 190c. In a 20-22cm oven-proof fry pan or tarte tatin pan add butter and sugar and vanilla bean cut in half lengthways. Sprinkle this with the five-spice powder.
  2. Peel, core and cut the pineapple in half then slice it and arrange in the pan on top of the sugar and butter, tightly packed. Cut the pastry in a circle to fit the pan, cover the pineapple, tucking in around the sides, and score the pastry. Place on the stove top and cook for about 10-15 minutes on medium heat until you can see a caramel forming.
  3. Place in the oven and bake for 20-25 minutes until the pastry is golden. Carefully take out of the oven and invert on to a serving dish.
  4. Serve with good quality cream or ice cream.
