- 100 grams Butter
- 100 grams Sugar
- 1 Vanilla Bean
- 1 teaspoon Five Spice Powder
- 1 packet Butter Puff Pastry
- 1 Pineapple
- Cream or Ice Cream to Serve

Instructions
- Preheat oven to 190c. In a 20-22cm oven-proof fry pan or tarte tatin pan add butter and sugar and vanilla bean cut in half lengthways. Sprinkle this with the five-spice powder.
- Peel, core and cut the pineapple in half then slice it and arrange in the pan on top of the sugar and butter, tightly packed. Cut the pastry in a circle to fit the pan, cover the pineapple, tucking in around the sides, and score the pastry. Place on the stove top and cook for about 10-15 minutes on medium heat until you can see a caramel forming.
- Place in the oven and bake for 20-25 minutes until the pastry is golden. Carefully take out of the oven and invert on to a serving dish.
- Serve with good quality cream or ice cream.
