- 1 1/4 cups Plain Flour
- 1/2 cup Sugar
- 1/4 cup Brown Sugar
- 1/2 teaspoon Bi Carbonate of Soda
- 1/2 teaspoon Cinnamon Powder
- 1 Banana
- 1/4 cup Canola Oil
- 1 Egg Whites beaten
- 1 teaspoon Vanilla Extract
- 1 cup Strawberries sliced
- 1/4 cup Rolled Oats

Instructions
- Preheat oven to 180 degrees C.
- In a bowl, combine the flour, sugars, bicarbonate of soda, cinnamon and stir to combine.
- Add mashed banana to the dry ingredients and stir.
- Add the oil, beaten egg white, vanilla and stir until just combined.
- Gently fold in 3/4 cup of strawberries.
- Pour batter into your slice form or oiled cake pan and top with 1/4 cup strawberries, pressing them very gently into the surface of the batter.
- Sprinkle with 1/4 cup rolled oats.
- Bake for 45 minutes or until toothpick comes out clean. Allow to cool before removing from the pan.
