  1. Preheat oven to 220c. For the filling, combine half the butter, half the brown sugar and cinnamon. Set aside.
  2. Combine flour, salt and remaining brown sugar in food processor. Add remaining butter in knobs and pulse until mixture resembles fine breadcrumbs. With motor running, add enough milk to just combine to soft dough. Turn dough onto a lightly floured surface and knead gently until just smooth.
  3. Roll to a rectangle about 10 mm thick with one long side closest to you. Spread with filling mixture leaving a 2 cm border on the long side furthest from you and sprinkle with walnuts.
  4. Roll dough firmly like a swiss roll. Cut into 12 pieces and place on paper-lined baking tray, just touching.
  5. Brush with extra milk and sprinkle with raw sugar. Bake for about 15 minutes or until golden. Serve warm with a little extra butter.
