Ingredients
- 425 grams Corn Cobs
- 2 cups Plain Flour
- 1 tablespoon Baking Powder
- 1 teaspoon Salt
- 60 grams Butter cubed
- 1 3/4 cups Tasty Cheese grated
- 1/4 cup Chives finely chopped
- 1 cup Milk
- 2 Eggs

Instructions
- Preheat oven to 220 degrees C. Grease and line a 20cm x 10cm x 8cm deep loaf pan with baking paper. Using a small serrated knife, cut the corn kernals from the cobs.
- Combine flour, baking powder, salt and butter in a food processor and pulse until mixture resembles fine breadcrumbs. Add corn kernals, 1 1/2 cups cheese and chives. Pulse until combined.
- Whisk milk and eggs together in a jug. Add to food processor and pulse until just combined. Do not over mix. Spoon mixture into prepared pan. sprinkle with remaining cheese and bake for 40-45 minutes or until cooked through when tested in the centre with a skewer.
