- 1 can Pineapple slices
- 1 cup Rum
- 1 cup Plain Flour
- 2 Eggs
- 1 cup Breadcrumbs
- 1 cup Coconut shredded
- 1 cup Icing Sugar
- 1 cup Oil

Instructions
- Drain pineapple juice from can and save for later.
- Add rum to can and refrigerate.
- In small bowl, whisk eggs and 1/2 cup pineapple juice.
- In separate bowl, combine bread crumbs and coconut.
- Cover each pineapple ring in flour, and dip into egg and coconut.
- In another bowl, mix together powdered sugar and rum from pineapple can.
- Fry coated pineapple rings in oil.
- Allow to cool, and drizzle with rum-sugar glaze.
- Serve and enjoy!
