Ingredients
- 2 tablespoons Vegetable Oil
- 1 Onion finely chopped
- 3 Garlic Cloves sliced
- 1 Butternut Pumpkin cut into chunks
- 2 teaspoons Ginger Ground
- 300 ml Chicken Stock or Vegetable
- 1 dollop Cream or Sour Cream
- Chives finely chopped

Instructions
- Heat to oil over medium heat in a pot or pan with lid. Fry the onion and garlic until soft.
- Add the chopped pumpkin and ginger.
- Stir for a couple minutes, and then add enough stock to just cover the pumpkin. Simmer with lid off for 10-15 minutes, or until the mixture is cooked.
- Process or mash the pumpkin until it's either slightly lumpy or smooth.
- Stir through the cream, and then season with salt ans pepper.
- Serve with extra cream and fresh cut chives for a professional finish.
