  1. Place orange zest into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula. Repeat milling 10 sec/speed 9, until a fine consistency is achieved. Scrape down sides of mixing bowl with spatula.
  2. Add dates and chop 5 sec/speed 6.
  3. Add prunes and chop 4 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  4. Add currants, sultanas, brandy (optional), spices and orange juice and mix 4 sec/counter-clockwise operation/speed 5, until combined. Transfer into a large bowl, cover and soak overnight at room temperature. Clean and dry mixing bowl.
  5. Grease a 1.25L (5 cup) pudding basin with butter and line base and sides with baking paper.
  6. Place quinoa and water into mixing bowl and cook 15 min/100°C/speed 2, until quinoa is tender. Transfer into simmering basket and set aside to drain. Rinse and dry mixing bowl.
  7. Place almonds into mixing bowl and mill 8 sec/speed 9.
  8. Add oil, eggs and drained quinoa and mix 10 sec/counter-clockwise operation/speed 4. Transfer quinoa mixture into bowl with reserved soaked fruit and stir, using the spatula, until combined.
  9. Spoon pudding mixture into prepared basin, smooth the surface and secure lid. Alternatively, after smoothing the surface, top with a layer of baking paper and foil pleated down the centre. Secure with kitchen string. Place pudding basin into Varoma dish.
  10. Place 2L of water into mixing bowl, then place Varoma into position and steam 99 min/Varoma/speed 1. Check water level and top up to 2L, then steam a further 99 min/Varoma/speed 1. Check water level and top up to 2L, then steam a further 99 min/Varoma/speed 1. Check water level and top up to 1.5L, then steam a further 30 min/Varoma/speed 1. Remove pudding basin and stand for 10 minutes, then turn out onto serving plate. Rinse and dry mixing bowl. Allow mixing bowl to cool to room temperature before making custard.
