Hi All, it has been awhile and for that i am sorry. Been a little busy of late. I have done quite a bit of cooking over the weeks lots of cakes, cookies, breads, dinners, etc. No point in writing about them because i could not tell you what i used, changed, etc.

A few of the bits i cooked up for Christmas for presents were my favourite 3 Ingredient Fruit Cake, Rice Bubble and Peanut Butter Slice and Mini Christmas Truffles.

For a change with the fruit cake i have cut them into smaller squares. I have spread jam over the sides and top and then placed a layer of fondant onto each one. I have decorated with ribbon, flowers and writing gel.

 

For the Mini Truffles for a change with these instead of dipping into chocolate to coat i have dipped and coated the truffles into chocolate sprinkles.

Another baking session was my brother’s birthday cake.

Another favourite, Oreo Cupcakes with Peanut Butter Frosting. An oldie but a goodie. No need for changes with this one. Always happy with how this turns out.

Just sprinkled some chocolate chips on the tops of these for decoration.

Another day another baking session. Had some bananas to use up. Found 2 recipes to try out for banana bread.

First one Double Chocolate Banana Bread. Using 3 bananas, butter, brown sugar, egg, vanilla extract, bi carbonate of soda, salt, plain flour, cocoa powder and chocolate chips. These have been combined into a bowl and the poured into 2 loaf tins.

I have baked these in the oven for 55 minutes.

Second one Avocado Banana Bread. Using sugar, butter, avocado, banana, eggs, milk, vinegar, bi carbonate soda, plain flour, chocolate chips. These have been combined into a bowl and then poured into a loaf tin.

This has been baked in an oven for 35 minutes.

Next, for a morning tea for work and then a few days later another made for Sales Meeting to munch on.

White Chocolate Cheesecake. Using Oreos and Butter for the base. Combined these and pressed into a pan.

Next i have then combined cream cheese, cream, sugar, white chocolate and gelatine in a mixer and beat on low until smooth.

I have then poured this into the prepared pan. I have cheated and drizzled peanut butter ice magic over the top of the cheesecake and then placed in the fridge overnight to set.
