- 2 Lemons Rind only
- 3/4 cup Caster Sugar
- 5 Eggs
- 3/4 cup Lemon Juice freshly squeezed
- 125 grams Butter cubed

Instructions
- Use microplane to zest lemons.
- Whisk zest and sugar together in jug with beater.
- Slowly add lemon juice, whisk until well combined.
- Add all cubes of butter.
- Microwave on 800 watts for 6 minutes, stopping each minute to whisk.
- Curd is done when thickened and coats back of a spoon.
- Once cooled. Store in snack cups or any other liquid tight container.
