- 1 cup Caster Sugar
- 1 3/4 cups Self Raising Flour
- 2/3 cup Cocoa Powder
- 1 teaspoon Bi Carbonate of Soda
- 1/4 cup Vegetable Oil
- 3/4 cup Sour Cream
- 2/3 cup Water
- 2 Eggs
Rich Chocolate Icing
- 60 grams Butter
- 100 grams Dark Chocolate chopped
- 1 tablespoon Cream

Instructions
- Preheat the oven to moderate (180C). Brush a deep, 20 cm baba or ring tin with melted butter or oil.
- Place all the ingredients in a food processor. Process in short bursts until the mixture is well combined and has a smooth texture.
- Spoon the mixture evenly into the prepared tin. Bake for 35-40 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Leave the cake in the tin for 10 minutes before turning onto a wire rack to cool.
- Combine the butter, chocolate and cream in a small heatproof bowl. Stand over a pan of simmering water and stir until the butter and chocolate have melted and the mixture is smooth. Cool slightly until the mixture is spreadable. Spread icing over cake using a wide knife.
- To serve drizzle with rich chocolate icing if desired
