Instructions
- Whisk eggs, sugar, lemon juice and lemon zest in a bowl set over a pot of simmering water.
- Whisk in butter until it melts and the curd begins to thicken.
- Once thickened, cool curd completely and refrigerate, covered, until serving.
- Serve curd with pavlova or inside tart shells.
