Ingredients
Marinade:
- 1 tablespoon Sesame Oil
- 2 tablespoons Tamari
- 2 tablespoons Lime Juice
- 1 Red Chilli diced
- 1 tablespoon Coconut Nectar
- Pinch Salt
Filling:
- 1 cup Swiss Brown Mushrooms diced
- 2 tablespoons Ginger grated
- 1 clove Garlic Cloves minced
- 1 Red Capsicum diced
- 10 cm Daikon or Radish, diced
- 2 Spring Onions sliced
- 1 cup Walnuts soaked 4 hours, drained and chopped
- 2 Corn Cobs kernals removed
- 1 cup Green Beans sliced
- 1/2 bunch Coriander chopped
- 1/2 bunch Mint chopped
- 12 Iceberg Lettuce Cups

Instructions
- Marinade: Combine all ingredients together in a bowl. Adjust to taste and set aside.
- Filling: Place all ingredients in large bowl. Pour over marinade, stir and let sit for 10 minutes. This will soften the vegetables also.
- Spoon the filling into lettuce cups and garnish with spring onions and sesame seeds.
- Roll up and eat!
